  • 2 cups sweet cherries, pitted and chopped
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • 1/2 tsp lemon zest
  • 1/2 tsp almond extract
  • 1 tsp cornstarch, dissolved in 2 Tbsp water

1. In a small saucepan, bring cherries, honey, cinnamon, lemon zest, and 3/4 cup water to a boil. Reduce heat to low and simmer, stirring, until cherries start to break down, about 5 minutes.

2. Puree half the mixture in a blender, then return it to the pan. Stir in almond extract and cornstarch, and simmer 1 minute.

3. Serve cherry sauce over waffles, pancakes, or French toast.
