Ingredients

  • 2 cans (6 ounces each) albacore tuna, drained
  • 1/4 cup black olives, pitted and halved
  • 1 tablespoon chopped parsley
  • 1 finely chopped plum tomato
  • 1 finely chopped kosher dill pickle (optional)
  • 2 tablespoons olive oil
  • ground black pepper
  • 4 leaves boston lettuce

Directions

  1. In a large bowl, combine the tuna, olives, parsley, tomato, and pickle, if using. Add the oil and pepper to taste, and mix gently to combine. Arrange the lettuce leaves on each plate and top with the tuna mixture.
