Ramen in Lemongrass-Ginger Broth with Poached Egg

  • 1 teaspoon sesame oil
  • 3 teaspoons olive oil
  • 1 tablespoon lemongrass pieces (1-inch)
  • 1/2 tablespoon minced garlic
  • 1/2 tablespoon minced fresh ginger
  • 1/2 teaspoon ground coriander
  • 3 cups low-sodium chicken broth
  • 1 cup sliced shiitake mushrooms
  • 1 cup thinly sliced red bell pepper
  • 2 cups baby spinach, chopped
  • 1 tablespoon distilled white vinegar
  • 2 large eggs
  • 1 package (3 ounces) black rice ramen noodles (no seasoning packet)
  • 1 teaspoon reduced-sodium wheat-free tamari
  • 1 teaspoon rice vinegar
  • 1/4 cup thinly sliced scallions
  • 1 teaspoon sriracha sauce (optional)

  1. Heat the sesame oil and 1 teaspoon of the olive oil in a medium soup pot or Dutch oven over medium heat. Add the lemongrass, garlic, ginger, and coriander. Cook, stirring frequently, until fragrant, 1 to 2 minutes. Add the chicken broth, reduce the heat to medium-low, cover, and simmer for 20 minutes.
  2. Heat the remaining 2 teaspoons olive oil in a large skillet over medium-high heat. Add the shiitake mushrooms and bell pepper and cook until soft, about 10 minutes. Add the spinach and cook for about 2 minutes to wilt. Set aside.
  3. Bring 6 inches of water to a simmer in a medium pot. Stir in the white vinegar and create a whirlpool by stirring quickly in one direction with a spoon. Crack one egg into a small bowl. Slowly drop the egg into the water. Leave to spin for 3 minutes (4 minutes if you want the yolk less runny), then lift out with a slotted spoon. Place the egg on a plate lined with a paper towel. Repeat the process for the second egg.
  4. Add the noodles to the simmering broth, along with the tamari and rice vinegar. Simmer until the noodles are soft, about 3 minutes.
  5. Ladle the broth and noodles into 2 bowls. Top each serving with the sauteed vegetables, a poached egg, and a scattering of scallions. Dot with Sriracha, if desired.
