Pineapple Dinner Salad

This is an absolutely delicious and satisfying meal. Having it to look forward to helps stave off temptation throughout the day, and I find the pineapple helps quiet my sweet tooth!

Ingredients

  • 2 skinless, boneless chicken breasts (6 ounces each)
  • 1/3 cup reduced-fat mayonnaise
  • 2 tablespoons honey
  • 1/3 cup reduced-fat sour cream
  • 2 teaspoons mustard
  • 1 pineapple, chopped
  • 1 Red Delicious apple, chopped
  • 1 small cucumber, halved and sliced
  • 1 avocado, chopped
  • 1 red bell pepper, cut into 1/2" pieces

Cook: 5 Minutes
  1. Place the chicken on a microwavable plate and microwave on medium for 3 to 5 minutes, turning once, until the chicken is no longer pink in the center and is cooked through. Let the chicken stand until it's cool enough to handle, and then cut it into strips. Set aside.
  2. In a small bowl, combine the mayonnaise, honey, sour cream, and mustard. Set aside.
  3. In a medium bowl, combine the pineapple, apple, cucumber, avocado, pepper, and chicken strips. Serve with the dressing on the side.
