This protein packed dip is a breeze to make in the blender, and it's bursting with drool-worthy Asian flavors, thanks to ingredients like edamame, ginger, wasabi, peanut butter, and garlic. Set this out at your next holiday bash with some Harvest Stone® Tomato Basil Brown Rice & Chickpea Crackers.
16 ounces frozen shelled edamame
3 Tbsp tahini
4 tsp lemon juice
2 Tbsp extra virgin olive oil
1/2 tsp salt
1 clove fresh garlic, minced
2 tsp soy sauce
1 tsp wasabi paste
3 tsp sesame oil
3 Tbsp peanut butter
In a food processor or blender, combine half of the frozen edamame, tahini (optional), olive oil, lemon juice, salt, soy sauce, chopped garlic, chopped ginger and wasabi paste. Blend until smooth.
Add the remaining frozen edamame and blend.
Add sesame oil and blend until very smooth.
Serve chilled with Harvest Stone® Tomato Basil Brown Rice & Chickpea Crackers.
