Chicken Rolls Florentine

"One of my favorite meals is sole florentine--it's a good source of healthy fats, and the spinach is nutrient rich. If you don't like fish, this is a good substitute."

  • 8 ounces fresh spinach
  • 1 1/2 teaspoons extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 1 tablespoon minced fresh rosemary
  • 1/4 cup dried bread crumbs
  • 1/4 cup crumbled feta cheese
  • 1 egg, beaten
  • 4 (4-ounce) boneless, skinless chicken breast halves, pounded flat to about 1/4" thick

  1. Wash the spinach. Transfer the wet leaves to a large saucepan. Cover and cook over medium heat until the spinach is just wilted, about 2 minutes. Drain. When cool enough to handle, finely chop and set aside.
  2. Rinse out the saucepan and place it over medium-low heat. Add the oil, garlic, and shallot. Saute until the shallot is soft, about 4 minutes. Add the spinach and saute for 2 minutes.
  3. Transfer the mixture to a large bowl. Add the rosemary, bread crumbs, cheese, and egg, and mix well. If the mixture does not hold together, add more bread crumbs.
  4. Spread equal amounts of filling on each of the 4 breasts. Carefully roll up each breast to enclose the filling. Secure with toothpicks, if necessary.
  5. Bring 1 inch of water to a boil in a large saucepan. Set each chicken roll on a small piece of parchment paper or foil, then transfer all 4 to a steaming rack. Set the rack in the saucepan. Cover and steam until the chicken is no longer pink when tested with a sharp knife, 15 to 18 minutes.
