Shaved Cantaloupe and Serrano Ham Salad

  • 1 medium cantaloupe, skinned and seeded
  • 1/2 lb thinly sliced serrano ham
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme leaves
  • Salt and pepper, to taste

1. Slice melon into thin ribbons using a vegetable peeler, sharp knife, or mandoline.

2. Cut ham crosswise into 3/4-inch strips.

3. Toss melon and ham together in a bowl. Drizzle with olive oil, then add thyme leaves and salt and pepper.
