A Recipe for Quick Pasta Salad

Whip together a quick, crisp, and healthy pasta salad for a nice side to any meal.

The whole wheat pasta tastes the same as the regular, and it helps me to eat healthier. I'm also eating more vegetables, because I experiment with different ones in my pasta.

  • 1 1/2 cup whole wheat rotini
  • 1 finely chopped plum tomato
  • 1/2 sliced, halved lengthwise, and seeded cucumber
  • 2 tbsps crumbled feta cheese
  • 2 tbsps light Italian dressing

1. Cook the pasta according to the package directions. Drain it, rinse it in cold water, and drain it again.

2. In a large bowl, combine the pasta with the tomato and cucumber. Gently fold in the feta and toss with the dressing to coat. Serve at room temperature or refrigerate for 30 minutes before serving.
