No-Bake Cranberry Carrot Cake Snack Balls

Makes about 10 

½ cup grated carrots
½ cup pitted dates
½ cup dried cranberries
½ cup walnuts
2/3 cup rolled oats
¼ tsp ground nutmeg
¼ tsp ground ginger
¼ tsp ground cinnamon
pinch salt
1 Tbsp fresh orange juice
zest from 1 small orange

1. Add all ingredients to a food processor. Blend until mixture resembles a dough. 

2. Roll mixture into snack-sized balls, about 1 inch in diameter. Chill in the refrigerator for at least 1 hour.
