  • 4 cloves garlic, minced
  • 1/2 cup lemon juice
  • 1 cup low-fat plain yogurt
  • 1/4 teaspoon ground black pepper
  • 6 tablespoons italian dressing (vinaigrette, not creamy)
  • 1/2 cup fresh mint, chopped
  • 1/2 cup parsley, chopped
  • 2 medium cucumbers, chopped
  • 6 medium tomatoes, chopped
  • 2 slices whole wheat bread with crust, cut into 3/4" cubes
  • 2 sprigs watercress, stems removed
  • 2 red onions, thinly sliced

Directions

  1. In a small bowl, combine the garlic, lemon juice, yogurt, pepper, dressing, mint, and parsley.
  2. In a large serving bowl, combine the cucumbers, tomatoes, bread cubes, watercress, and onion. Pour the dressing over the salad and toss gently.
