Grilled Fish Tacos with Chipotle Crema

Fried fish tacos on menus at sit-down chains usually come clobbered with fried batter to make up for tasteless fish. Avoid the calorie overload by using better-quality fish and fresh toppings like cabbage and avocado.

  • 1/2 cup Mexican crema or sour cream
  • 3 limes--1 juiced, 2 cut into wedges
  • 1 tablespoon finely chopped canned chipotle pepper in adobo sauce
  • chopped fresh cilantro
  • vegetable oil, for the grill
  • 1 pound mahi-mahi, halibut, or fresh tuna
  • 1 1/2 teaspoons chile powder (preferably ancho)
  • salt and ground black pepper
  • 8 corn tortillas
  • 1 cup finely shredded cabbage
  • 1 avocado, thinly sliced
  • hot sauce

  1. Fire up the grill to medium-high.
  2. In a small bowl, mix together the crema with the lime juice, chipotle, and a handful of chopped fresh cilantro. Set aside.
  3. Drizzle a light coating of oil over the fish and rub on the chile powder and a pinch each of salt and black pepper. Place the fish on the grill and cook, undisturbed, for 4 minutes. Carefully flip it with a spatula and cook for another 4 minutes. Remove. Before turning off the grill, warm the tortillas directly on the surface for 1 to 2 minutes.
  4. Divide the fish evenly among the warm tortillas, add a bit of cabbage, spoon on the crema mixture, and top with avocado slices and fresh cilantro. Serve each taco with a wedge of lime and some hot sauce.
