Tomato Watermelon Salad

A fun salad that is also a delicious and healthy summer treat.

  • 4 cups coarsely chopped tomatoes (about 1 1/2 pounds)
  • 2 cups coarsely chopped seedless watermelon
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh mint
  • 1/4 cup chopped pistachios



1. In a serving bowl, combine the tomatoes and watermelon.

2. Toss with the olive oil, vinegar, salt, pepper, and mint. Top with the pistachios.
