Tofu and Watercress Wrap with Peanut Sauce

  • 3 tbsp natural peanut butter
  • 1 tbsp fresh lime juice
  • 2 tsp fresh lime juice
  • 2 tsp reduced sodium soy sauce
  • 2 tsp sugar
  • 2 tsp water
  • 1 tsp grated or finely chopped fresh ginger
  • 1/2 tsp red pepper flakes


  • 2 whole wheat tortillas (9"—10" diameter, 180 calories each)
  • 6 oz extrafirm tofu, drained, patted dry, and cut into 1/2" cubes
  • 2 cups watercress leaves
  • 1 tbsp chopped cilantro

1. To prepare sauce: Whisk ingredients in small bowl.

2. To prepare wraps: Heat tortillas per package directions.

3. In small bowl, toss tofu cubes in 1 tablespoon of the peanut sauce.

4. Spread 1 tortilla with half of remaining sauce.

5. Layer with half of tofu cubes, watercress, and cilantro, and then roll.

6. Repeat with second tortilla and serve.
