Spicy Charred Cauliflower

  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 heads cauliflower, sliced into 2 to 4 planks (slices) per head
  • olive oil


1. Combine spices, salt, and pepper and set aside.

2. Preheat oven to 500° F. Brush cauliflower planks on both sides with oil, season with salt and pepper, and lay on a sheet pan. Roast for 6 to 8 minutes or until ends soften.

3. Preheat a grill to medium. Brush a fresh layer of olive oil onto cauliflower and sprinkle with spice mix.

4. Place each plank directly on the grill rack and cook until lightly charred, about 5 to 8 minutes. Flip and lightly char the other side.
