Russet Oven Fries

These fries don't have all the fat that's normally involved, and they're just as flavorful.

  • 2 large russet potatoes, sliced into 1/4"-thick lengthwise strips
  • 1 egg white, lightly beaten
  • salt
  • ground black pepper

1. Preheat the oven to 400°F. Coat a baking sheet with organic cooking spray.


2. Brush the potatoes with the egg white & sprinkle with the paprika.

3. Bake for about 20 minutes, or until the fries are nicely browned.

4. Season with salt and pepper to taste.

Recipe Tip: For a nice crunch, put the cooked fries under the broiler for a few seconds.
