  • 1/4 cup fresh, homemade sauerkraut
  • 1 tablespoon crumbled feta cheese
  • 1 tablespoon Thousand Island dressing
  • 2 slices rye bread
  • 2 slices reduced-sodium smoked deli turkey
  • 1 slice swiss or mozzarella cheese



1. Mix the sauerkraut, feta, and dressing in a small bowl. Spread on 1 bread slice. Top with the turkey, Swiss, and the remaining bread.

2. Coat a cast iron skillet with cooking spray and place over medium heat until hot. Add the sandwich and grill for 2 to 3 minutes per side until the cheese has melted.
