  • 3 cups fresh corn kernels
  • 3 cups chopped fresh tomatoes
  • 1/2 cup chopped cilantro
  • 2 seeded and chopped small jalapenos
  • 3 tbsp each fresh lime juice and cider vinegar
  • Salt and pepper

1. Stir together 3 cups fresh corn kernels, 3 cups chopped fresh tomatoes, 1/2 cup chopped cilantro, 2 seeded and chopped small jalapenos, 3 tbsp each fresh lime juice and cider vinegar, and salt and pepper to taste.


2. Chill, covered, until ready to serve. (Makes 6 cups.)
