Blender Golden Gazpacho

5 medium yellow or orange tomatoes
1 1/2 cup chopped seeded cucumber
1/2 cup chopped green pepper
1/4 cup chopped red onion
1 teaspoon minced garlic clove
1 teaspoon seeded minced jalapeno
1 teaspoon extra virgin olive oil
1/2 teaspoon salt
1 teaspoon minced garlic clove
1 tablespoon sherry vinegar

1. A gorgeous first course: Cut up 5 medium yellow or orange tomatoes and place in a blender with cucumber, green pepper, red onion, garlic clove, jalapeno, sherry vinegar,  olive oil, and salt; puree.


2. Chill for 30 minutes. Serve garnished with diced avocado, if desired.
