Autumn Pumpkin Mix

  • 3/4 cup brussels sprouts
  • 1 cup cubed pumpkin
  • 2 tsp olive oil
  • 1 oz crumbled goat cheese
  • 2 tbsp pistachios
  • 1/2 medium pear, sliced
  • 2 tbsp balsamic vinegar
  • 2 tsp yellow mustard


1. Toss brussels sprouts and pumpkin with oil and roast for 30 minutes at 350F, turning halfway through.

2. Remove from oven and toss with remaining ingredients.

3. Roasting squash brings out its natural sweetness. It's no brownie, but it will help satisfy your sweet tooth.
